Gazpacho is one of those dishes that can bring up really divided opinions. Some love the refreshing flavors of chilled, puréed vegetables, while others probably find it a bit reminiscent of baby food. I enjoy a cold summer soup, but I was craving a slight variation in this version via Bon Appétit. The lightly charred flavor of the red pepper and heat from the chipotles almost turn this into a salsa, but cucumber and chicken stock help to balance everything out.
