Peach Cobbler

A few weekends back I had the house to myself and barely left. I spent one day on the couch, only leaving briefly to pick up take-out food, and on Saturday, one of my best friends came over for the entire day. We drove to the farmers' market where we picked up peaches and then talked in the front yard until our cheeks were rosy from the sun. We wanted to bake something with our summer fruit and decided on a peach cobbler, using this Cook's Illustrated recipe. We peeled peaches together, side-by-side at the sink, and later sat together impatiently while we waited until it was cool enough to eat. We sped up the process by using a scoop of vanilla ice cream and enjoyed it in the late afternoon sun. There's something about a summer dessert that manages to slow down time for just a bit.
