Popsicle Cool Down


Stay cool this summer with these refreshing and healthy Popsicle recipes. Okay yes I know it is a bit early for Popsicle's but personally I eat frozen treats all through out the cold seasons and I love Popsicle's. So with these refreshing and healthy Popsicle recipes cool down this summer.



{Watermelon Mojito}

2.5 cups watermelon
1 lime peeled (use 1/2 lime if you prefer it not as tart)
handful of fresh mint
if you’d like an adult version, add 1/4 cup rum 
Blend, freeze for 12 hours

{Peaches & Cream-sicle}
3 ripe peaches
5 fresh strawberries
1/2 frozen banana
1/2 cup plain yogurt {cow's or goats} we use goat's at home {use coconut milk if lactose intolerant}
2 tablespoons raw honey {if you would like the extra sweetness} Don't use for babies under 1.
2 tablespoons fresh squeezed lemon juice

Combine all of the ingredients in a blender. Pour into Popsicle molds. Check back in 4-6 hours.
You could also layer this creamsicle by leaving the yogurt out of the recipe and pouring it at the bottom of the mold and then the rest of the mixture on top.



{Pineapple Kiwi Delight}

4 ripe kiwi
1 1/2 cups fresh pineapple juice {or not from concentrate}

Peel kiwis and add to a food processor. 

Pour in juice and pulse 3 to 4 times. 

Pour into your molds and freeze.
