The Two Minute Breakfast

Pumped up Parfait

Ingredients:
  • 3/4 cup whole grain flakes or puffs {millet rice, oat-bran flakes, spelt flakes, brown rice puffs, etc}
  • 1/2 cup plain yogurt or your favorite yogurt
  • 1/2 cup fresh berries, or your favorite fruit
  • 1 tsp chia seeds
  • Small handful of raw walnuts
Layer all ingredients or mix together in a bowl. Almost like a sweet treat in the morning and great for any time of the day you have a snack attack. 

Scrambled Egg & Spinach Wrap

Ingredients:
  • 2 scrambled eggs
  • 1/2 cup washed baby spinach
  • Salsa {I prefer warm homemade salsa}
  • Whole grain wrap, tortilla or pita {brown rice, millet & teff, whole wheat}
Scramble eggs and add spinach. Once cooked add to wrap with salsa. Roll it up and enjoy.

Breakfast Pizza

Ingredients:
  • Whole grain English muffin or toast
  • Soft goat cheese or shredded mozzarella
  • Sliced tomatoes
  • Drizzle of olive oil
  • Pinch of sea salt
  • scrambled egg {optional for some extra protein}
Heat breakfast pizzas in a toaster oven or toast the whole grain English muffin first and add cheese, egg{optional} tomato, olive oil and salt. I like adding scrambled eggs to mine. Make it your own.
